Just two years ago, Johan was trying to solve a problem: he wanted to find a butcher who could turn his freshly-harvested game meat into sausage. No one could quite deliver what he had in mind, so he did what any passionate hunter-turned-maker would do: he learned to do it himself.
What started as a personal project quickly evolved into something bigger, deeper, and incredibly flavorful. Today, Fairfield Sausage Co. is a family-run, small-batch sausage and charcuterie business near the heart of Chilliwack built around a shared love for honest food, hard work, and the pursuit of craftsmanship.
From Wild Game to World-Class Craft
Once Johan had mastered the basics of sausage-making, he didn’t stop. He dove head-first into the world of cured meats, studying the traditional techniques of European salumists and pitmasters alike. He experimented with cured salamis, smoked meats, and the complex art of dry aging- painstakingly recreating the environment of Italian curing caves by engineering a climate-controlled curing chamber from a glass-doored commercial refrigerator.
From this home-based setup, Johan produces an impressive lineup of hand-crafted, small-batch meats that blend old-world technique with modern precision.

By day, Johan is a professional construction manager, leading complex building projects with precision and leadership. But his heart is increasingly pulled toward the smoker and curing room. Though Fairfield Sausage Co. began as a side project, it’s quickly grown into a true passion project- and the ultimate goal is to turn it into a full-time career.
With the foundation of quality, family, and craftsmanship already in place, there’s no doubt that Johan and his family are building something special: one sausage, one brisket, one beautifully-aged salami at a time.

Feature Recipe: Fairfield Sausage Co. Bacon-Wrapped Pepper Poppers (Serves 4)
These easy-to-prepare bacon-wrapped delights are the perfect combination of savory and spice and make a delicious and exciting appetizer or side dish.
Ingredients:
8 oz cream cheese, softened
1 1/2 cup shredded pepper jack cheese
1 clove garlic, minced
sea salt
freshly-cracked black pepper
4 green Cubanelle peppers (or similar)(halved lengthwise and de-seeded and de-veined)
8 slices of bacon
Instructions:
Step 1: Preheat the oven to 400F. In a large bowl, combine the cream cheese, pepper jack, and garlic. Season with salt and pepper (to taste).
Step 2: Fill each pepper half with cheese mixture and wrap each with a slice of Fairfield Sausage Co. bacon.
Step 3: Place on a baking sheet and bake until bacon is crispy and peppers are tender (about 35-40 minutes).
